Iron-enriched bread to fight anemia
In response to the demand for iron-enriched foods (it is estimated that nutritional deficiencies due to lack of iron in food affect about 1,500 million people worldwide), AINIA, together with two research centres and four food companies, two of them Spanish – Investigación y Desarrollo Panadero, SL (INDESPAN), and Emilio Peña, S.A. (EPSA) – are investigating to obtain bread enriched with iron elaborated in a sustainable way. The result is bread that, in addition to providing health benefits, also adds value to its sensory elements (mainly flavour) to make it more attractive. This project aims to provide the baking industry with new healthy products through the use of whole-grain flours that are not used much today, and innovative baking processes.
